3 Ingredient Tahini Grain Salad (vegan, gluten free, dairy free, zero waste)

Meal prep for me consists of prepping lots of different components that I can throw together in different combos with different dressings throughout the week. I like to make lots of roast veggies, a protein based dish, and a whole grain each week. This 3 ingredient grain salad is PERFECT because it has enough flavor to enjoy alone or to combine with some veggies and protein.

The secret weapon is Seed + Mill’s herbed tahini. Tahini is one of my favorite condiments. It’s made from sesame seeds and 1 tbsp has about 1.5 grams of fiber, 2.5 grams of plant based protein, 8 grams of healthy polyunsaturated fats, and 12% of the Daily Value of magnesium (among so many other nutrients). It has a nutty flavor and works really well as the component of a dressing! In this recipe, it works as the ONLY dressing, making this a simple and nutrient dense dish to add into your rotation!

Also, you can purchase quinoa and millet NAKED, meaning you can purchase it without plastic packaging from most bulk sections of a supermarket!

  1. Rinse the quinoa and the millet in a sieve until the water running through it is clear.

  2. Add the grains to a sauce pan with 1 3/4 cups of water and a pinch of sea salt. Bring to a boil.

  3. Reduce heat to a simmer, cover, and let sit for 10-15 minutes until the grains are cooked, but not mushy.

  4. Fluff the grains with a fork and then mix in the herbed tahini.

  5. Transfer to a glass or stainless steel container and store in the refrigerator!

  6. Take a deep breath and enjoy!!
