Organic Tofu Cream Cheese

I wish I thought of making my own tofu cream cheese during my first trimester when all I wanted to eat (and all I could tolerate) was bagels. This creamy, tasty cream cheese alternative is SO MUCH more delicious and satisfying than I ever could have dreamed. And, now, in my second trimester, when bagels are just as alluring to me, I’m able to enjoy them with this protein-rich, calcium-rich tofu spread.

Soy contains lysine, which is an essential amino acid commonly missing in a plant-based diet, which is one reason that it’s one of my favorite sources of protein and is a staple in plant-based diets. I recommend eating soy products no more than 2-3 times per week and limited to the HIGHEST QUALITY AVAILABLE- organic, non-GMO, small batches. I limit my regular soy intake to organic tofu and tempeh only. Processed soy creeps up as additives in many foods (i.e., soy lecithin, soy protein isolate) and these are the types of soy to avoid.

There are options in New York for bulk tofu that doesn’t come in plastic packaging. However, quality is always the MOST important and even I will choose higher quality tofu in plastic rather than lower quality in bulk without plastic.

ORGANIC TOFU SPREAD

Ingredients

  • 1 block firm organic tofu (save the water that the tofu is packed in!)

  • 3 tbsp water (from the tofu)

  • ¾ cup cashews

  • Juice from ½ a lemon

  • 2 ½ tbsp honey apple cider vinegar

    • Note: this is a flavored ACV purchased at a Farmer’s Market. If you can’t find one, use regular ACV and add 1 tsp of honey.

  • ½ tsp sea salt

Directions

  1. Add all ingredients to the smoothie bowl attachment of the NutraMilk.

  2. Blend on the butter cycle for 3-4 minutes until super creamy (like cream cheese).

  3. Enjoy on a whole grain bagel or on whole grain toast. Transfer the tofu cream cheese to a glass jar for storage in the refrigerator!
